Butternut Squash Soup Recipe

Ingredients:
For the Soup:
1 medium butternut squash, peeled, seeded, and cut into cubes (about 4 cups)
1 tbsp olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes (preferably fire-roasted for extra flavor)
1 can (13.5 oz) full-fat coconut milk
3 cups vegetable broth (or chicken broth)
1 tsp ground ginger (or fresh grated ginger for extra zest)
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
Salt and pepper, to taste
1-2 tbsp Komodo Gold Hot Sauce (adjust to desired spice level)
1 tbsp fresh lemon juice (optional, to brighten the soup)
Optional Garnish:
Fresh cilantro or parsley, chopped
A swirl of coconut milk
Croutons (for added texture)
Instructions:
Prepare the Butternut Squash:
Start by peeling, seeding, and chopping the butternut squash into 1-inch cubes.
Cook the Aromatics:
In a large pot or Dutch oven, heat the olive oil over medium heat.
Add the chopped onion and cook for 5-6 minutes, until softened and translucent.
Add the minced garlic and cook for another minute, until fragrant.
Cook the Butternut Squash:
Add the cubed butternut squash to the pot and stir to combine with the onions and garlic.
Cook for 5-6 minutes, stirring occasionally, allowing the squash to lightly caramelize.
Add Tomatoes, Coconut Milk, and Broth:
Stir in the canned diced tomatoes (with juices), coconut milk, and vegetable broth.
Bring the mixture to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the butternut squash is tender and easily pierced with a fork.
Blend the Soup:
Once the squash is cooked, use an immersion blender to blend the soup directly in the pot until smooth and creamy. Alternatively, you can carefully transfer the soup in batches to a regular blender and blend until smooth.
If the soup is too thick, you can add more broth or water to reach your desired consistency.
Add Spices and Komodo Gold Hot Sauce:
Stir in the ground ginger, cinnamon, nutmeg, and Komodo Gold Hot Sauce.
Taste and adjust the seasoning with salt, pepper, and more hot sauce if you prefer more heat.
Add a tablespoon of fresh lemon juice to brighten the flavors, if desired.
Serve:
Ladle the soup into bowls and garnish with fresh cilantro or parsley, a swirl of coconut milk, and croutons if using.
